Potato Patties
Aida Boyer McAnn — The New Brunswick Cook Book (1938)Seasoned mashed potato bound with egg, rolled in bread crumbs, and pan-fried until golden on both sides — a delicious way to use up leftover mashed potato, with an optional topping of grated cheese.
Ingredients
- 2 cups mashed potatoes
- 1 egg
- Salt to taste
- Fine bread crumbs for rolling
- Small amount of fat for frying
- Grated cheese for topping (optional)
Instructions
- Season the mashed potatoes and add the beaten egg. Mix thoroughly.
- Shape into flat, round patties and roll in the bread crumbs.
- Melt a small amount of fat in a frying pan. Fry patties first on one side, then turn and brown on the other.
- If desired, sprinkle with grated cheese just before serving. Serve hot.
