New Brunswick's distinctive buckwheat pancakes — a blend of buckwheat and wheat flours, buttermilk, and soda dissolved in hot water. The 1938 cookbook names these simply "New Brunswick Specials," a proud regional claim.

Ingredients

  • 1½ cups buckwheat flour
  • 3 tablespoons wheat flour
  • 1 teaspoon soda (scant)
  • 1 teaspoon salt
  • 1 egg
  • 2 cups buttermilk
  • 2 tablespoons hot water

Instructions

  1. Mix the two flours and add the salt.
  2. Add the buttermilk and the beaten egg. At the last, add the soda dissolved in the hot water.
  3. Mix thoroughly, beating up well to the proper consistency for dropping from the tip of a spoon onto a hot, greased griddle.
  4. Grease the griddle with vegetable oil to minimize smoke.
