Crisp, thin cookies made with both crushed maple sugar and granulated sugar — rolled out and baked in a quick oven. A New Brunswick sugar-season classic from the 1938 cookbook.

Ingredients

  • ¾ cup crushed maple sugar
  • 1 cup granulated sugar
  • 1 cup butter
  • 2 eggs
  • 2 teaspoons baking powder
  • 4 cups flour
  • 2 tablespoons water

Instructions

  1. Cream the butter and add both sugars gradually. Add the well-beaten eggs and water.
  2. Sift the flour and baking powder together and add to the first mixture. Add more flour if necessary. The dough should be soft enough to handle.
  3. Chill slightly. Roll out thin on a floured board and cut with cookie cutters.
  4. Bake in a quick oven (450°F) for about 10 minutes.
