Maple Candy
Aida Boyer McAnn — The New Brunswick Cook Book (1938)A soft, beaten maple candy made from maple sugar and light brown sugar cooked with corn syrup, then poured over stiff egg whites — studded with raisins and walnuts and dropped in pieces on waxed paper.
Ingredients
- 1 cup maple sugar
- 1 cup light brown sugar
- ¼ cup corn syrup
- ¾ cup water
- ¾ cup chopped raisins
- ¾ cup walnut meats
- 4 drops vanilla
- ½ teaspoon cream of tartar
- 2 egg whites
Instructions
- Place the sugars, water, corn syrup, and cream of tartar in a saucepan and boil for a few moments. Add the chopped nuts and raisins.
- Continue boiling until a soft ball is formed when a bit of the mixture is dropped in cold water.
- Flavor with vanilla and pour over the stiffly beaten egg whites. Beat until light.
- Drop from a spoon on waxed paper, placing a raisin on top of each piece.
